
Garlic Herb Veggies : which includes, carrots, beans, baby potatoes and green peas alongwith boiled eggs is seasoned with crushed garlic and fresh rosemary & olive oil and then roasted to perfection. This dish is perfect for dinners any time of the year . you can choose your choice of vegetables . It can be from pumpkins to sweet potatoes to brocolli to cauliflower to any veggies of choice- prefably the ones in season. Also make sure to cut them evenly and roast according to the time required for example potatoes, pumpkin or sweet potatoes may take the same amount of time, carrots & beans make take same, brocolli & cauliflower may take the same. So roast accordingly. You can have it as it is or pair it on a bed of lettuce leaves, or garlic bread or any millet breads .
Ingredients needed for this dish :
* Baby Potatoes
* Carrots
* Green Beans / French Beans
* Green Peas
* Eggs
* Garlic
* Rosemary
* Salt, Freshly ground Black Pepper & Red chilli flakes
* Extra Virgin Olive Oil
METHOD :-
In a dish cut and put all the veggies except green peas and mix them nicely in olive oil, crushed garlic , rosemary, salt, pepper & red chilli flakes and put them in the oven . Preheat the oven for 400 Degrees for 20 minutes. In a seperate pan in dot of oil put shredded ginger with green chillies (slit from the middle) , saute for two mins and put the green peas, add salt, cook for 5 minutes . Meanwhile boil the eggs. Then serve them hot . Put everything on a platter . Serve Hot.
Make sure that the eggs you use are hormone free / antibiotic free / Free Range as they are more healthier then the conventional way of hens breeding and laying eggs.
