
There’s absolutely nothing like having a bowl of soup in this cold weather – which is warm & comforting. It’s a whole meal in itself . Carrot juice is one of the winter special soups & has many health benefits .
INGREDIENTS:
Carrots: 4-5 ( chopped )
Potatoes: 2 ( chopped in cubes )
Onions : 1 ( sliced )
Garlic : 5 ( chopped )
Extra virgin olive oil: 1 teaspoon
Salt : to taste
Black pepper : as per your taste
Turmeric powder : 1 teaspoon
Roasted Cumin Powder : 1 teaspoon
Cilantro: for garnish .
METHOD: in a pan add olive oil then the garlic , once it’s aromatic add-in the onions and sauté it for sometime . Then add the potatoes, sauté it for two minutes and then add the carrots . Sauté for 2-3 minutes and then add 4 cups of water . Add salt , pepper , turmeric and cumin powder. Let it cook . Once the veggies are cooked let it slow cook for 15 minutes . Then with a hand blender- blend it all till the texture is creamy and adjust the water consistency. Serve hot . Garnish with pepper powder , cumin powder and cilantro. You can have it on it’s own or alongwith a salad or with dinner rolls .
